Outsized portions have led to an outsized populace

Americans blame a lot of things for gaining weight. We sit too much. We don’t exercise. We drive more and walk less. But the root of the cause is that we simply eat too much. A recent analysis by Cornell’s Brian Wansink looked at how the caloric content of a “serving” in the classic Joy of Cooking recipe book has changed during the last 70 years. What he found was pretty shocking: For the 18 recipes he looked at the number of calories per serving increased from 268.1 to 436.9, a 63 percent increase.
